Pearl sugar is a popular ingredient used in many baking recipes in Europe. Add iced sugar and then sugar pearls on top of the choux. Remember to never open the oven during the baking! Remember: If you want to conserve the chouquettes, you have to put them in an airtight box. A chouquette is a type of viennoiserie consisting of a small portion of choux pastry sprinkled with pearl sugar and sometimes filled with custard or mousse.
